A Winter Wedding in Somerset

Mollie and Tom's winter wedding at Coombe Lodge, Blagdon.

Mollie and Tom were married at one of my favourite times of the year, on a chilly and bright day in late December 2022 - very close to Christmas Day. By the day of their wedding, I was feeling suitably festive and ready to deck the halls with cupcakes!

When we met at our cake consultation, Mollie and Tom shared with me their love of this time of year, so I suggested that we go with traditional Christmas colours and add some festive touches to the cakes.

It’s always a pleasure to deliver to Coombe Lodge. I love the approach to the house, the long driveway is elegant and grand, but also on a practical note it's a dream for cake delivery, with the hill not being too steep and the drive not being too bumpy! Coombe Lodge looks great in all seasons, but it was especially lovely to see it all twinkly and cosy for Christmas, with the wood fires burning inside.

Mollie and Tom opted for a textured buttercream finish on their wedding cake, which gives a rustic feel and is a bit different to the usual smooth buttercream finish. It makes a lovely base for the edible gold leaf to shine on. The wedding cake was a rich chocolate cake, finished with edible gold leaf, dark green bay leaves grown in my garden, and white roses from The Wilde Bunch florist.

The cupcake tower I created for Mollie and Tom was inspired by the classic trio of red green and gold, and some gorgeous flavours: caramel, spiced apple, gingerbread, and lemon. There were some vegan guests at the wedding, so Mollie and Tom opted for vegan apple caramel cupcakes so that no one had to miss out on having cake. My homemade vegan caramel sauce that topped the cupcakes is delicious and very moreish! I baked these mini gingerbreads using the tiniest gingerbread shaped cutter I could find, and these were dusted with gold lustre to finish off the top of the cupcake tower. Fiddly to cut out, but worth it!

The couple kindly shared some of their photos with me, and I particularly liked the shadow effect on this one below, where the cake has taken center stage for the evening part of the celebration. It feels like this is a moment of calm between all the busyness and joy of the wedding day. It also made me think of the slightly stressful behind the scenes job that someone will have done of lifting the cakes and cupcake tower on and off the table to move it to this position! After the wedding guests have been fed and the toasts have been made, the room is cleared and the cake is ready for cutting and for partying to begin…

I always love seeing photos of the cake cutting as I never usually get to witness this moment! This shot of the happy couple cutting the cake surrounded by family and friends is beautiful and they both look so happy. Mollie and Tom were absolutely lovely to work with, I wish them all the love and luck for their future together!
